It’s the time of year when venison is plentiful and the freezer is full. With four boys in our home, we usually have venison on hand year round.
Wild game is an inexpensive way to provide meat for your family. With virtually no cost associated with raising an animal, your only investment is time. Integrating venison into your usual recipes isn’t hard. It is is very similar to beef, only leaner.
Venison stir fry is also great way to use up extra vegetables in your fridge. You can use almost any vegetable in this recipe and I’m sure it would taste great.
What is Venison?
Here in the south venison refers to white tail deer meat. Generally it’s hunted as wild game. In other parts of the country venison may be a different species of deer or elk.
Does Venison Taste “Gamey”
Gamey is a term that some use to describe venison. It’s an earthy flavor that wild game often has. If you are use to farm-raised meat, it can taste different. However, brining or marinating larger cuts in an acid like lemon juice, red, wine, or buttermilk will make the meat more tender, and decrease wild flavor.
Can venison be purchased without hunting it yourself?
There are businesses that sell farm-raised venison, and will ship it to you. The meat will not have the same flavor if it’s farm raised. This company sells and ships venison meat online. Ingredients for Venison Stir Fry
- 2 lbs Venison Tenderlion sliced thin
- 1 1/2 cups Soy sauce divided
- 4 tsp brown sugar
- 3 cloves crushed garlic
- Red pepper flakes
- 2 tsps fresh grated ginger
- 2 tbsp corn starch
- 1 tbsp plus 1 tsp Sesame oil divided
- 1 whole carrot
- 1 whole yellow onion diced
- 2 cups broccoli florets
- Rice or quinoa
Directions
- Start by slicing your venison tenderloin thin for the stir-fry. Marinate the tenderloin in 1 cup of soy sauce for a minimum of 1 hour but up to overnight. The longer the tenderloin marinates, the better.
- Combine 1/2 cup soy sauce, garlic, red pepper flakes, ginger, and corn starch in a bowl.
- Using a large skillet, heat the sesame oil over high heat until the pan is very hot. Put the tenderloin in the skillet and sear it on all sides. Do not overcook the tenderloin. Remove the tenderloin from the skillet.
- Add 1 tsp sesame oil to very hot skillet. Add in the vegetables an cook until they are tender . This will take around 3 minutes.
- Return the venison to the pan, and cover with soy/brown sugar mixture. Allow everything to come together over high heat for 2 minutes.
- Remove from heat, and serve over rice or quinoa.
Adding a little extra crushed red pepper, and serving with cucumber slices is delicious.

Venison Tenderloin Stir Fry
Ingredients
- 2 lbs Venison Tenderloin Thinly Sliced
- 1 1/2 cups Soy Sauce Divided
- 4 tsp Light Brown Sugar
- 3 cloves Garlic Crushed
- 1 pinch Red Pepper Flakes
- 2 tsp Fresh Grated Ginger
- 2 tbsp Corn Starch
- 1 1/2 tbsp Sesame Oil Divided
- 1 whole Carrot
- 2 cups Broccoli Florets
- Rice or Quinoa
Instructions
- Start by slicing your venison tenderloin thin for the stir fry.
- Marinate the tenderloin in 1 cup of soy sauce for 1-12 hours.
- Prior to cooking, combing 1/2 cup soy sauce, garlic, red pepper flakes, ginger and corn starch in a bowl.
- Heat 1 tablespoon of sesame oil in a large skillet.
- Add the tenderloin, cooking it until it is just seared. Do NOT overcook the tenderloin.
- Remove the tenderloin from the pan, and set it aside.
- Heat the remaining sesame oil, and add the vegetables to the hot pan.
- Cook the vegetables until they are tender. This will take about 3 minutes
- Return the venison to the pan with the vegetables, and cover with the soy sauce/brown sugar mixture.
- Allow stir fry to simmer in the sauce on low for around two minutes.
- Serve over rice or quinoa.
