Thumbprint Cookies

These retro thumbprint cookies are easy to make, and use with simple ingredients.

Ingredients
  

  • 3/4 cup Sugar
  • 2/3 cup Butter (1 stick + 3 tbsp)
  • 2 large Eggs
  • 1 tsp Pure Vanilla Extract
  • 12 Oz Semi-sweet Chocolate Morsels (divided)
  • 2 cups Old fashioned oats
  • 1 1/2 cups All purpose flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 10oz jars Maraschino Cherries (drain and pat dry)

  • 1/2 sheet Cookie pan
  • Parchment Paper

Method
 

  1. Let the butter and eggs come to room temperature.
  2. Sift flour, baking powder, and salt together.
  3. Beat the butter and sugar together.
  4. Add the eggs in and beat for about 3 minutes or until light and fluffy.
  5. Add vanilla extract and mix until combined.
  6. Using a double boiler, melt 1 cup of semi-sweet chocolate morsels.
  7. Add in melted chocolate and mix well.
  8. Add in the oats and flour and mix until combined.
  9. Cover the dough with plastic wrap, and chill it in the fridge for at least 1 hour.
  10. When you're ready to bake the cookies, preheat the oven to 350ยบ F.
  11. Shape dough into 1" balls.
  12. Place balls 2 " apart on parchment lined baking sheet
  13. Using your thumb, press down the center of the cookies.
  14. Place a cherry in the center of each cookie.
  15. Bake cookies for 10 to 12 minutes, or until they are set.
  16. Remove cookies from the oven and allow them to cool on a rack.
  17. Melt remaining 1 cup of morsels in a double boiler.
  18. After the cookies have completely cooled, drizzle the melted chocolate over them.
  19. Allow the chocolate to set before serving .
