Sourdough Discard Crazy Bread

Delicious and simple sourdough discard bread is a great way use extra sourdough starter.

Ingredients
  

  • 2 1/2 cups all purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup softened butter
  • 1 cup milk
  • 1/2 cup sourdough starter
Filling
  • 1/2 cup softened butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tbsp cinnamon

Equipment

  • 1 Loaf pan
  • 1 Rolling Pin
  • 1 Pizza Cutter

Method
 

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Cut softened butter into dry ingredients until you have pea-size or smaller bits.
  3. Whisk milk and discard together.
  4. Add the discard-milk mixture to the dry ingredients and combine until a dough forms.
  5. Knead dough for 5 minutes. You may need to add a little additional four if dough is too sticky.
  6. Place the dough in a bowl. Cover with a towel or plastic wrap, and let it rise for 2-4 hours or until it doubles in size. The time will vary depending on the temperature of the kitchen.
  7. Pre-heat the oven to 350° F
  8. On a floured surface, roll out the dough until it is around 1/4" thick.
  9. Prepare the filling by mixing granulated sugar, brown sugar, and cinnamon together.
  10. Spread softened butter over dough. Be sure to spread the butter to the edges.
  11. Sprinkle cinnamon sugar mixture over entire surface of the dough.
  12. Cut the dough vertically and then horizontally to make squares. A pizza cutter works great for this.
  13. Line the loaf pan with parchment paper.
  14. Stack the dough in the Loaf pan, filling the pan with the individual squares.
  15. Bake for 50-60 minutes, or until the internal temp of the dough is around 200° F.
