Simple, Southern Purple Hull Peas

Ingredients
  

  • 1 quart shelled purple hull peas
  • 1 quart chicken broth
  • 2 tsp salt
  • 4 strips thick cut bacon

Equipment

  • 1 large pot

Method
 

  1. Rinse peas under cool water.
  2. Transfer the peas into a medium pot with salt and bacon.
  3. Cover the peas with the chicken broth.
  4. Bring the peas to a boil, then reduce the heat to simmer.
  5. Simmer on low heat for 2 hours until the peas are tender.
  6. Check the peas frequently, and add additional liquid as necessary.
  7. Serve with warm cornbread, a ring of sweet onion, and relish.
