Method
- Begin by preparing the slow cooker with a light coat of butter.
- Mix 4 cups of pumpkin puree with 1/2 cup brown sugar, ½ cup pecans, and 2 tsp pumpkin pie spice.
- Spread the pumpkin mixture evenly in the bottom of the slow cooker.
- Next, whisk together 1 cup whole milk and 1 tsp vanilla extract. Pour the milk mixture over the pumpkin mixture in the slow cooker. Do not stir.
- In a separate bowl, mix 1 cup self-rising flour, 1 cup sugar, and ½ tsp salt together. Layer it over the top of the other ingredients in the slow cooker. Again, do not stir.
- Melt ½ cup melted butter. Pour the butter over the top of the flour in the slow cooker. Do not stir.
- Cover the slow cooker and cook on high for 4 hours.
- Note: I start checking the pumpkin cobbler at around 3 ½ hours to ensure it isn’t burning. Slow cooking times can vary depending on the type you are using.
- Serve the pumpkin cobbler warm with a big scoop of homemade vanilla ice cream, or a dollop of whipped cream.

Grease the Crockpot First: Make sure to spray the crockpot with non-stick spray or lightly grease it to prevent sticking and make cleanup easier.
Use Fresh Spices: For the best flavor, use fresh spices like cinnamon, nutmeg, and cloves. Old spices can lose their strength, so fresh ones really make a difference in taste.
Avoid Overmixing: When combining ingredients, mix gently just until combined. Overmixing can make the cobbler too dense.
Cover with a Towel: Place a kitchen towel under the lid to absorb extra moisture, preventing a soggy topping. Just make sure the towel edges don’t touch the heating elements.
Check for Doneness Early: Crockpots can vary, so check your cobbler about 30 minutes before the recommended time. If the top is golden and a toothpick comes out clean, it’s ready!
Add a Topping Right Before Serving: For an extra treat, serve your cobbler with a cold scoop of ice cream, a drizzle of caramel or maple syrup, or a dollop of whipped cream.
Use a Timer Setting: If your crockpot has a timer, it’s helpful for ensuring you don’t accidentally overcook it. Most pumpkin cobblers need about 2–3 hours on low.
Keep Warm Until Serving: Set your crockpot to “warm” to hold the cobbler until you’re ready to serve, keeping it nice and cozy for family and friends.
